Health a' Plenty

The purpose of my column is to introduce you to delicious and nutritious meat and dairy free meals.  I joined the Wellness Foundation in Montauk and learned that a lifestyle free of all animal products can help stop and reverse heart disease, help fight and prevent cancer, have enormous environmental benefits and stop the suffering of billions of animals per year.  For the last 20 months I have been following a lifestyle that is rich in plant- based whole foods.  It has been an interesting road and I can assure you I have never felt better!  I hope you try my recipe at least once this month.  It is quick, easy, very satisfying and above all good for you!

Summer Lemon Kabobs over rice   Serves 4-6

Ingredients:
1 tsp. Sea salt
1 tsp. Freshly ground black pepper
Juice of 2 lemons
1⁄2 tsp. Cumin
3⁄4 cup extra virgin olive oil
1 tsp. Lemon zest
2 red onions cut into 8 pieces
Box of whole white mushrooms
Box of cherry tomatoes
3 peppers, all colors, cut into 2-inch pieces
2 zucchini cut into 2-inch rounds

Combine salt, pepper, lemon juice, lemon zest, cumin and olive oil.  Marinate vegetables in mixture for 2 hours. Soak 10-inch wooden skewers in water to prevent burning. Heat grill. Skewer the vegetables, layering by type and color and grill on all sides until tender.

Rice Recipe:
1 cup white rice
21⁄4 cup salted veg. stock
Handful of pignoli nuts
3 tbsp. Soy butter

Melt soy butter in a pan on low heat, add pignoli nuts and cook on medium-high until nuts are golden brown.  Add rice and vegetable stock. Follow rice directions on box.
